Green Chili and Red Onion Quiche

This vegetarian quiche blends the flavors of green chilis and red onions. I used almond milk instead of cows milk and it was fine. If you want to add meat protein, you could add some chopped shrimp or chorizo sausage. Pepper Jack cheese could be substituted for the cheddar. I prefer to use refrigerated pie crust rather than make my own. However, if you are a purist, you can use your favorite pie crust recipe. I think you could also make this with a sweet potato crust.




Green Chili and Red Onion Quiche


ready made pie crust (or make your own)

5 eggs

1 cup milk

1/3 cup of half and half or heavy cream

1 cup of grated sharp cheddar cheese

1 4 oz can diced green chilis

1/3 cup finely diced red onions

1/2 tsp chili powder

1/4 tsp salt


1. Preheat oven and a baking sheet to 400 degrees F.

2. Line a pie plate or quiche plate with pie crust.

3. Whisk the eggs, milk, cream, salt, and chili powder.

4. Add the chilis, onions, and cheese and mix thoroughly.

5. Pour into quiche plate.

6. Bake for 40 minutes or until quiche is nicely browned on top.

7. Let cool for 30 minutes before slicing.
