One way I like to get more cruciferous vegetables into my diet is to make various cabbage slaws. This cole slaw is a big hit with my family. It's colorful, the blend of flavors is delicious, and it's low in calories and healthy. You can certainly make your own cole slaw dressing but I like to save time and use a few tablespoons of Marie's fresh cole slaw dressing that you can buy in the fresh vegetable section of your supermarket. I keep the dressing down to a minimum so the slaw is not "soaked" in dressing and stays crispy, but you can add more if you wish. When you dice the ingredients, try to keep the sizes fairly equal. Try this the next time you need to make a side dish to go with your usual lunch time sandwich.
Confetti Slaw
1/2 head of cabbage, diced into tiny pieces
1/4 red onion, diced
1/2 red bell pepper, diced
1/2 green bell pepper, diced
1 large carrot, diced
1/4 cup minced cilantro
1/2 T finely minced fresh ginger
3 T cole slaw dressing
1 T balsamic vinegar
1 tsp fresh ground pepper
sea salt to taste
1/3 cup dried cranberries
1/3 cup peanuts
Mix all the ingredients together, chill, and serve!
