New England Pumpkin Pie


A freshly made pumpkin pie is so much tastier than the mass-produced, store-bought kind. This is my favorite "Maine" pumpkin pie recipe modified from the back of the can recipe from "One-Pie Pumpkin" prepared pumpkin which comes from Maine pumpkins and is processed and canned in West Paris, Maine!

Maine Pumpkin Pie

1 can of ONE-PIE pumpkin or other prepared pumpkin
1 T cornstarch
3/4 tsp cinnamon
1 tsp of freshly grated ginger root (or 1/2 tsp ginger powder)
1/2 tsp nutmeg
1/2 tsp salt
1 T melted butter
1 12 oz can of evaporated milk
3/4 cup sugar
1/8 c plus 1 T of molasses
2 eggs (beaten)
9 inch pie crust

Mix sugar, cornstarch, salt, cinnamon, ginger, and nutmeg together. Add pumpkin mix and stir. Add beaten eggs, melted butter, molasses, and milk and mix thoroughly. Line a 9 inch pie plate with your favorite pie crust and pour in pumpkin mixture. Place in pre-heated 450 degree oven for 15 minutes. Reduce to 350 and bake for about 45-50 more minutes.
