Meatloaf is one of those quintessential comfort foods. Everyone has a meatloaf recipe, often passed down from generations. I make my mother's meatloaf recipe which has lots of diced onion and green pepper and is seasoned with both Worcestershire and soy sauce. Regardless of what recipe you use for your meatloaf, try this:
Grilled Meatloaf
Make your favorite meatloaf recipe the day before you plan to serve Grilled Meatloaf. After the meatloaf is cooked, let it cool, then wrap it in foil and place in your refrigerator overnight to "firm up". The next day, slice the meatloaf. Place slices on the grill and grill until heated through and char marks are on each side. The grilling gives it a nice "crunch" on the outside while sealing in the juices. Leave on the grill acording to how much "char" you prefer. Optional: brush each side with olive oil, BBQ sauce, or a favorite marinade before grilling or baste with a sauce after you take it off the grill. Also makes fantastic meatloaf sandwiches served on a grilled baguette or bun!

Boy that sounds good. My recipe is similar, but I've never grilled it the next day. My mouth is watering.
