Sausage and pepper pasta is one of those comfort food meals that comes together quickly—brown the sausage, sauté the peppers and onions, boil the pasta, and you’re basically done. No complicated steps, no hard-to-find ingredients. And the flavor? That’s the best part. The juices from the sausage soak into the peppers and onions and combine with the olive oil and cream, creating a rich, slightly sweet and savory combination that clings perfectly to the pasta.
Sausage and Pepper Pasta
3/4-1 lb of ground Italian sausage (not in the casings)
1 green pepper
1 red bell pepper
1 large onion
1 can stewed tomatoes
5 T olive oli
3 T heavy cream or half n half
any kind of pasta (enough for 4-5 servings)- cooked and drained
salt and pepper to taste
1. Brown the sausage and drain off the fat. Set aside.
2. Cut the peppers and onions into strips. Sauté in the pan that browned the sausage, adding a T of olive oil.
3. When peppers and onions are soft, add the remaining olive oil and browned sausage to the pan.
4. Pour the stewed tomatoes with their juice into a small bowl and crush thoroughly into small bits with your hands. Pour into the sausage and pepper mixture.
5. Bring all to a simmer. Add cream for a silky sauce. Simmer until thickened. add pasta and stir together to thoroughly mix. Add salt and pepper taste.
