Carrot "Tabouli"
Tabouli is a Middle Eastern salad made with finely chopped parsley, tomatoes, mint, onion, and soaked bulgur, dressed with olive oil and lemon juice. It has a bright, zesty flavor and a light, crisp texture, making it a refreshing side dish. I decided to substitute the bulgur with grated carrot, tomatoes with golden raisins, and mint with cumin seeds and add a bit of crunch with walnuts. I suppose it is really not tabouli but it reminds me of it with the addition of the parsley. Whatever you want to call it- it is a delicious salad!
2 cups of grated carrot (or pulsed coarsely with a food processor)
3/4 cup of fresh flat-leaf parsley, chopped
1/4 cup finely minced red onion
3 T chopped walnuts
1/4 tsp whole cumin seeds
1/4 cup chopped golden raisins
1 1/2 T extra virgin olive oil
2 T fresh lemon juice
1/4 tsp salt
1. Add the first 6 ingredients to a bowl and mix together.
2. Pour in olive oil, lemon juice, and salt.
3. Stir all together and serve cold.
