Tomato/Pimiento Cheese Sandwiches



Classic southern pimiento cheese and fresh garden tomato slices create perfect harmony in a sandwich. The creamy, sharp pimiento cheese adds a savory base that complements sweet, garden grown tomatoes, especially heirloom tomatoes.  Together, they form a great summer sandwich, especially on a lightly toasted, crusty artisan bread. You can also spread it on crackers for a nice appetizer. My recipe makes a small batch (about a cup and a half. You can double it for more). If you like it slightly spicy, add about 1/4 tsp cayenne pepper.

Pimiento Cheese/Tomato Sandwich:

4 ounces cream cheese

4 ounces of fresh grated sharp cheddar (orange cheese will give a better color)

1/4 cup mayo

1/2 tsp dry mustard

1/2 tsp paprika 

salt to taste

1 small jar (4 oz) of diced or sliced pimientos

slices of a good artisan bread, such as sourdough

slices of fresh tomato, preferably heirloom


1. Thoroughly mix the first 3 ingredients.

2. Add the mustard and paprika and mix thoroughly.

3. Drain the pimientos and add to the mixture. Add salt to taste and mix throughly.

4. Lightly toast the bread.

5. Spread a thick layer of pimiento cheese on the toast.

6. top with 3-4 slices of tomato.
